The Bronze is the patriarch of all American turkey varieties in existence today. Center-Cut Single Pork Loin Chops, Tamworth
These single bone chops are cut from the prime center of the pork loin. The Tamworth is the only native red breed to England, with heritage tracing back to the wild pigs of Middle Age Europe. A slow growing breed, the Tamworth is active and hearty with notes of fruity, earthy, clean, mineral, root, sweet and tender.
Sliced Signature Bacon, Old Spot
Old Spots make excellent bacon and charcuterie with a delicious milky fat. Descended from the native old English pigs of western England, this pig was mentioned as early as the 1780's. The spotted pig forages on fallen orchard fruits and other farm by products. Despite their signature oversized floppy ears which hang over their eyes, this gentle pig is hearty and self-reliant.
Lamb Loin Chops, Dorset Horn
These lamb chops are a pure treat — decadent, tender, succulent, and rarified. Each lamb only yields a few pounds of these special chops. Our Dorset Horn lamb is sourced from our long time farm partners in Vermont, Tamarack Sheep Farm. A rare breed of sheep that spread over Dorset, Somerset, Devon, and most of Wales, in the 1750s this is the breed that the English people with fine palates would eat for Christmas!
