Flank Steak, Premier Akaushi Wagyu
Also referred to by French butchers as the "bavette", the flank steak is tender and juicy, cut from the belly of the steer. Only a limited amount of Wagyu derives from the Akaushi breed, also known as the Emperor's breed in Japan, where it was first free ranged on Mount Aso, the largest active volcano in Japan.

Cut thick and marbled gorgeously, each piece includes both the tenderloin and loin section of the pig, making these chops a unique treat, easy to cook (just a few minutes on each side), and satisfying for even the most demanding meat lover! French colonists brought these hogs to New Orleans as a favored meat breed. The Red Wattle eventually would populate the forests of Texas.

Chicken Drumsticks, Barred Plymouth Rock 
Much like the thigh, drumsticks are made of dark meat, best for slow roasting or braising. They are laced with ribbons of sun-yellow fat that self-baste the bird as it renders, resulting in silky meat and crackly bronzed skin. The Plymouth Rock, America’s first officially recognized breed of chicken, reigned as king of the United States’ broiler industry for over 100 years. Its reliability, adaptability, health, and quality kept it immensely popular until the rise of the Cornish cross hybrid in the mid-1900s.
